PRODUCT CULTURE AND DETAILS:
It is an ORGANIC EXTRA VIRGIN olive oil obtained from the pressing of the olives (only Nocellara type) produced exclusively in the olive groves that fall in the territories of Western Sicily. The squeezing occurs only in cold mechanical means, in order to preserve the flavors and the original quality of the product. In addition, for this valuable oil we have chosen a dark bottle in order to preserve better the product, since the presence of light can increase the oxidative degradation reaction. The Olive plants used are grown in Sicily, harvesting and packaging take place entirely in Sicily, in fact on the label appears the wording MADE IN ITALY. Also in unfiltered oil (as in the case of Our Monocultivar), the oil fog and the presence of residuals on the bottom (thin layer of deposits), in fact testifies the authenticity of the product, especially in young oils, and gives a greater conservation of aromas and flavors. The difference with a common extra-virgin olive oil, extracted from various species of olives is remarkable. The IGP denomination (Protected Geographical Indication) is a mark, issued by the European Union, which defines products that are identified by the peculiarities related to a specific territory and which comply with a production in where the historic origin can be proved as declared. Nowadays, according to the European Standard, no Sicilian manufacturer can label oils as produced in Sicily, although these are grown and packed 100% in Sicily.
